Gluten-free Corn-free Peanut Butter and Jelly Pie

In my web searches I have not been able to find any sites that cater to both gluten and corn allergies/intolerances. Recipes are either gluten free with corn, or corn free with gluten.

Here is one of my gluten and corn free recipes.

Ingredients:
2 Tablespoons of your favorite peanut or other nut butter
1 Tablespoon of your favorite jelly or jam
1 small extra sweet and juicy apple. (Red delicious, fuji, etc….)
1 melon baller

Directions:
Cut the top off of the apple with a knife (bottom too, if the apple sits crooked.) Carve out the center of the apple with a melon baller. Scoop generous portions of the peanut butter and jelly mix into the center of the apple and serve! Apples can also be peeled ahead of time for kids that don’t eat skins.
