This pecan dreams cookie recipe will melt in your mouth!

Pecan Dreams
The pecan dreams cookie has always been a childhood favorite for me. I can remember sneaking into the freezer as a child to snatch these shortbread-like cookies in the days before our holiday gatherings. I would go into hiding to eat those pecan dreams so that my mom wouldn’t catch me in the act. Mom often had half her batch of pecan dreams left when it came time to divvy them up as gifts to friends and family or serve them for dessert after the holiday dinner.
She never said a word to me or my brother about the missing pecan dreams cookies.
After my son’s diagnosis in 2007 with celiac disease and his need to go on a strict gluten and corn free diet, we had to stop making this family favorite. Over the years I have attempted to recreate it but have never gotten the recipe quite right, until now.
But I am very happy to have found a gluten and corn free pecan dreams cookie recipe that works just great this year!
This cookie recipe very similar to the traditional pecan dream one, thanks to the folks at Better Batter and their wonderful baking mix. When it comes to cookie making, especially ones that need to retain their form, Better Batter has really worked well in my kitchen.
If you’d like to try this one out, the recipe is quite simple to do, even with the kids, and isn’t too time consuming.

Ingredients
- 2 1/2 cups Better Batter (note: mix contains xanthan gum which is bothersome to some with corn allergies)
- 1/2 cup powdered sugar (commercial brands often have corn starch, so corn allergic folks need to make their own homemade version or buy corn-free powdered sugar)
- 1 cup palm oil
- 1 tsp. vanilla extract (if you have a corn allergy you need to use homemade vanilla or scrape vanilla beans into recipe)
- pinch of sea salt
- 1/2 cup pecans (finely chopped)
Directions
Preheat oven to 350°F. Sift together flour and powdered sugar. Beat palm oil, vanilla and salt. Add flour mixture. When well mixed add 1 cup of pecans.
Roll cookie batter into 1 inch balls. Bake for 12 minutes, watching carefully. Bottoms should be lightly browned, while rest is still white. Let the cookies cool about 10 minutes so that they set up nicely.
Roll in powdered sugar. Makes approximately 30 cookies, rolled into 1 1/2 teaspoon sized balls. If you make them smaller it will make 3 doz. cookies.
I like to use silicone baking sheets. In my convection oven these cookies are done in about 10-12 minutes. Just watch them while they bake to get an idea how long it will take in your oven.
