
Halloween is slowly approaching, inevitably marking the beginning of the sweet treat season that doesn’t quite end until Valentine’s day. This poses quite the challenge for the allergy sensitive family wanting to indulge a little without suffering major setbacks. Over the next few months I will be devoting some time to holiday baking without wheat or corn. I am working on altering a few favorite family recipes and researching Feingold friendly colors, corn-free extracts, and wheat-free doughs. In the meantime, here is a rundown of our top 5 favorite gluten and corn-free baking mixes.
- Breads from Anna Gluten and Yeast Free Bread Mix: This is my husband’s favorite bread mix. It is also dairy, soy, and rice free. It bakes up like an old fashioned loaf of Irish Brown Bread and tastes great with jam on top. We do add about 1/4 cup of brown sugar to the loaf and wrap it in a damp tea towel just after we take it out of the oven to give it a nice soft crust. I highly recommend this bread to anyone who needs to avoid yeast as well. It is a nice bread to start with.
- Miss Roben’s Carrot Cake Mix: This is a great mix and it is free from xanthan gum for those that are extremely sensitive to corn. We found it produced a nice moist cake that included just the right amount of spices and was not too sweet. It would make a fantastic cupcake for that class party you have volunteered to chaperon, and won’t put a big dent in the wallet either.
- Namaste Foods Brownie Mix: The first time I made this for the family I almost ate the entire sheet myself. It is that good. I kid you not. Nobody, and I mean NOBODY would know this was gluten-free if you didn’t tell them. Note: this mix is corn-free, but does contain xanthan gum.
- Miss Roben’s Cake-Like Doughnut Mix: I made these with my son on several occasions. He absolutely loves these. We have made them in large and small sizes. It is not easy to master the donuts, my best suggestion for you is to follow the directions very carefully. We did not use a donut maker, as the dough really needs to be refrigerated first and that made it difficult to dispense. Instead we used Tablespoons to measure and drop heaping balls into the hot oil. This mix is a fantastic substitute for Dunkin Donuts “plain” donut munchkins. Another bonus is that Miss Roben’s donuts can also be frozen. We have used corn-free powdered sugar, cinnamon and sugar, and chocolate toppings on these donuts to provide a variety of flavors.
- Pamela’s Baking and Pancake Mix: It is no secret that I love this handy “all purpose” mix. We have used it to make a host of things including muffins, pancakes, waffles, and crepes. “Pamela’s Baking and Pancake Mix” can be purchased in bulk through Amazon. Note: this mix does contain xanthan gum, milk, and nuts.
- Pamela’s Wheat-free Bread Mix: Finally, I will end with this little gem. I bought it a while ago, and had it sitting in my pantry because I really dread making bread. Even when I wasn’t doing gluten-free breads, baking with yeast was always a problem for me. I could take the same recipe and botch it several different ways. I need easy. Well, let me tell you, this was fantastically easy, unbelievably so. All I did was empty the mix and yeast into a very old and worn-out hand-me-down bread machine, cracked two eggs into a measuring cup, added oil and warm water, and stirred. I poured the liquid into the machine, turned it on and then scraped down the sides once or twice. Four hours later I was eating the most fabulous sandwich-worthy gluten-free bread I’ve come across yet. You can also buy“Pamela’s Wheat-Free Bread Mix” in bulk at Amazon. It can be used to make cheese bread, herb bread, cinnamon bread, and even stuffing. Note: this mix is casein free but contains xanthan gum and honey. Please Note: If you are just starting out it is probably best to avoid yeasty breads. Some people may suffer similar reactions to yeast as they do to gluten or corn. If you are not sure it is best to stick with yeast free products until you feel an improvement in your condition.
- Miss Roben’s Gluten-free Animal Cookie Mix: I recently bought this to make an alternative cookie for my son’s preschool Halloween party. I was very impressed with the mix. Miss Roben’s Animal Cookie Mix was fast, easy to make, and the cookies held together quite well after pre-baking them the day before, freezing them, and then traveling with them. My son decorated the cookie with ease. It did not crumble and was very comparable to his peers. Several taste-testers thought it looked and tasted the same as the typical home-baked sugar cookie. I used a medium-sized cookie cutter and made them at least 1/4 inch thick. I would most definitely use this mix again and again. No holiday gathering would be complete without it.
