Adrienne,
Nancy's Cultured Lowfat Organic Cottage Cheese is corn-free (Eugene, Oregon). You may be able to get it at your local grocer. I know Whole Foods carries it; that's where we get it. If not, did you know that cottage cheese is easy to make at home? My son and I did it for a science project. You just boil whole milk and then add rice vinegar. It will separate immediately. Then just strain the curds and whey through a cheesecloth. The resulting cheese will have very small curds. The combination (I believe) is 1 cup milk to 1 tablespoon vinegar.

What brand of cottage cheese or ricotta do you use? I was not aware of any corn-free versions. Would love to make this though! (=
