Need to make a fast asparagus spears side dish that your kids will love? Try heating up this sweet asparagus spears recipe. It is important to get kids eating their vegetables. A power-packed one like asparagus spears is a fantastic choice, but kids usually turn their noses up at them. For a change of pace, add a little fresh plum sauce. Asparagus is a special vegetable because it is extremely high in glutathione, the most powerful antioxidant. This makes asparagus spears an awesome choice for kids with an ADHD diagnosis, people with Parkinson’s disease, cancer patients of all ages, and folks suffering from dozens of other diseases. Glutathione is an antioxidant that helps repair cell damage,  keeps inflammation down and helps the body get rid of toxins.

Asparagus Spears have been a popular vegetable as far back as ancient Egypt. Sometimes it feels like I have been trying to get my boys to eat asparagus spears since about that time. They just wouldn’t ever touch it. Asparagus is also a great source of vitamins A, C, and folate, so I can’t accept vegetable eating defeat.  I am forever trying to serve up these gems, often leading to a battle of wills, then an ingenious act of deception on my part. But this time my children ate them in broad daylight without a fuss. I created this new asparagus side dish on a complete whim and it was a recipe my kids loved. My eldest said it tasted like ‘bees honey’ and after much cajoling and a promise that he could ‘spit it out’ at the table if he needed to, my middle child (he’s the one that’s three), said (and I quote): “Mommy! This is not yucky!”

One plum and a touch of honey.

Ingredients:

one bunch of asparagus spears

olive oil

salt

one plum

1 tablespoon of honey (buy only organic or Trader Joe’s to guarantee it isn’t pollen free).

Directions:

I snipped the bottoms of of my spear bunch and placed them in a preheated pan with warm olive oil and a dash of salt.

While they softened I began on my sauce. I took one fresh (nice and juicy) plum and skinned, cored, and sliced it. I placed it (raw) in a mini prep food processor and finely chopped it. Then I added it to the pan along with a tablespoon of honey.

I continued cooking the asparagus in the plum ‘sauce’ until the spears were completely softened. (Any crunch and my kids would have said no way!)

That’s it! This side dish serves 4-5.

    I tried to get my kids to eat green beans for a long time. After observing that french fries were just a host to ketchup, I boldly served a heap of firm green beans adjacent to a puddle of ketchup. To this day, I think my kids believe there are two colors of french fries!
