Darrell, I kept it in original packaging at room temp until I used it. After making it, I stored the leftovers in the fridge and reheated in the oven at about 300 F. The pizza crust is pretty big for just one person, I admit. But you do not need to freeze it. At least I have never cut a portion off and froze it to save for a future use.

@Jennifer: YES!! O'Dough's crusts are amazing, and I too am happy about the lack of calcium propionate.

@Caryn: Thanks for the head's up about Pane Riso's crust!

You should try the O'Dough's new Pizza Crusts. They just launched them this year. I picked up a package at Organic Garage. My son LOVED it! It even comes with gluten free sauce. And no Calcium Proprinate :)

Hi Bernie!
Pane Riso crusts are made with:
rice flour, potato starch, water, non-hydrogenated canola oil, sugar, salt, methylecellulous (thickening agent), yeast, calcium propionate, and monoglycerides.
It is one of several different kinds of crusts we use and the most 'real' tasting one we've ever had. Our kids eat a Feingold diet, though, so I don't make it a staple. We have also used the Arrowhead Mills Pizza Crust and my family likes it too.

I had pizza today from I think Pizza Nova, it was a staff meeting and it was great. The doulble chocolate cookies were out of this world. Thank you so much for your efforts in the gluten-free world. I have gluten-free crusts made from quinoa, may I ask what is the base of your crust? Thanks
