Pizza in a Pinch

Want to eat a slice of your favorite pizza with everything on it but don’t have time to make a homemade gluten-free corn-free crust? Here is a quick way to make a healthy meal in a cinch. We borrowed Amy’s frozen cheese pizza (made with a gluten and corn-free rice crust) and jazzed it up to make a more balanced meal.  Dairy-free? Amy’s also carries a vegan version in a convenient individual frozen size. Now everyone can enjoy pizza again (unless you are avoiding soy!). Little people love this pizza with fresh veggies and will fight over who gets the final piece, so don’t put away that pizza cutter until the last piece is split in half! Amy’s also makes a dairy-free gluten-free spinach pizza, so those looking to stay away from dairy can still satisfy that craving.

Ingredients:

1 12 oz frozen gluten-free cheese pizza (Amy’s)

1 small green pepper

1 small sweet onion

1 small clove of garlic

1 medium-sized ripe tomato

1/3 c of additional mozzarella cheese

1/4 c olive oil

dash of salt

Directions:

Take the pizza out of its wrapper and set aside. Chop green pepper and onion into large chunks. Place in a mini-food prep processor with a peeled garlic clove and blend until ingredients are finely chopped. Heat the olive oil in a pan at medium heat. Add a dash of salt (helps to render the onions and garlic). Next, add blended ingredients.

While they are browning dice the tomato and add it to the pan. Cook on medium heat until the vegetables are soft and tender. Using a spoon with holes to drain the oil, remove the vegetables from the pan and place them directly on top of the pizza. Spread evenly, then top with extra cheese. For better results follow Amy’s directions for a Crispier Crust. (375 farenheit for 13 minutes, then broil it 30-60 seconds to brown the cheese.)

The pre-cooked softened vegetables are a hit with young eaters who shy away from the typical “crunchy” or “chewy” toppings you might encounter when baking raw ingredients on a pizza. Finally, you can omit or add just about any ingredient you like to make this recipe one that will work perfectly for you!

TIP: Amy’s is now offering an individual sized Gluten and Dairy-free cheese only pizza. It would be perfect for school functions that include pizza parties. Check your local freezer section at your grocer for it, and if they don’t have it but do carry other Amy’s products inquire about having them carry it for you. They just might do it! (note: this GFCF vegan pizza contains soy).
