Gourmet Pancakes

Fluffy, light, and so moist they will melt in your mouth, this gluten-free corn-free dish will have you forgetting it’s not made with wheat. These pancakes taste (and look) so much like the real thing that you will be amazed. The batter makes a soft pancake that is not rubbery or crumbly. It has a nice rise and cuts easily with a fork. The kids will love it for their special Sunday morning breakfast. Extra pancakes can be frozen in a ziploc bag and then reheated in the toaster. Be sure to make plenty– these hotcakes go fast!

Ingredients:

2 cups of Pamela’s Baking and Pancake Mix (contains nuts and milk)

2 eggs (egg beaters are fine as substitute.)

1 1/2 cups of Rice Dream’s Horchata *may contain barley gluten* If so, you may substitute with regular rice milk and a tablespoon of cinnamon

1 snack container of all natural apple sauce (4oz)

Directions:

Mix all ingredients in bowl until batter is smooth. (Slight lumps are normal). For best results use a griddle pan and pre-heat to 375 degrees farenheit. Start with one pancake. If it cooks too fast— turn down the heat, too slow— turn it up. Pancakes will need about two-three minutes each side, maybe more, depending on how brown you like them. Watch them as they cook because they can overcook very easily.

Set your oven at 175 degrees farenheit and place cooked pancakes on a ceramic dish in oven until all are finished. This will keep them moist and warm until you are ready to serve. We top with pure maple syrup or an all natural fruit spread. Traditional powdered sugar contains corn starch and should not be used. (Although you can find corn-free powdered sugar online [link], or you could make it yourself [link].) These pancakes are so moist they do not need to be topped with butter or margarine.
