If you are frantically getting ready for the holidays and in need of a good alternative to the egg nog in the stores, here’s a terrific dairy free recipe that is quick and easy.

We hadn’t had egg nog for years until last Christmas when we decided to have a battle of the egg nog contest at our house: Joy of Cooking vs. the Internet.  We mixed up a batch of the Joy of Cooking Cooked recipe.  My mom chose an internet recipe that was less rich and less sweet.  The Joy of Cooking recipe was sweeter and richer – much richer.

Someone who gave me mayo advice a while back said that there was nothing that compared to real, fresh, honest mayo.

Boy, was she right.

I have attempted to make mayo before, but it wasn’t until recently that I finally cracked the code. I have tried several different recipes both online and even the one found in my beat up Better Homes and Gardens Cookbook that has navigated my kitchen with me for years.

I have always failed. It didn’t matter how many times I tried, my mayonnaise never  wanted to thickenen properly. If it did it would deflate as soon as I added the oil.

I was rummaging through the pantry trying to figure out what to make for dinner last night. I had a little over an hour and few ingredients– eggplant, a box of gluten-free lasagna noodles, a jar of sauce, a container of cottage cheese.

I contemplated making lasagna but without my usual ingredient listing I decided to pass, instead opting to try Eggplant Parmesan for a change.

This was my first attempt at making Eggplant Parmesan, period, never mind trying to alter it to make it gluten free. The dish turned out to be a favorite with everyone, and the kids especially loved the battered, fried eggplant. I decided to officially add it to the list. chicken curryMost curry recipes include many steps and a laundry list of ingredients. It is hard enough to get food on the table for our busy family these days, with two in sports this spring. After serving this dish quite a few times and always getting a good response I decided to add it to the favorites list.

This is an easy curry recipe that takes about 5 minutes to prepare and about 30 minutes to cook.

Great for a busy evening, it has become a family favorite around here. We like to eat it once or twice a month, sometimes more, and often change it up a bit for variety.  You can add garlic, ginger, just about anything you’d like. I assume most folks on special multiple allergy diets have cast an uneasy eye on the new Expandex modified tapioca starch. I recently purchased a bag to experiment with and did a little investigating on the product in order to hopefully shed some light on things.

I contacted Corn Products U.S. technical support last week and a company representative responded (albeit after almost a week of waiting). Perhaps that is a good sign. The representative may have been digging deep to make sure the information presented is factual and accurate….

My contact confirmed that Expandex Modified Tapioca Starch is made in a dedicated facility where no gluten or corn are processed.
