chicken curryMost curry recipes include many steps and a laundry list of ingredients. It is hard enough to get food on the table for our busy family these days, with two in sports this spring. After serving this dish quite a few times and always getting a good response I decided to add it to the favorites list.

This is an easy curry recipe that takes about 5 minutes to prepare and about 30 minutes to cook.

Great for a busy evening, it has become a family favorite around here. We like to eat it once or twice a month, sometimes more, and often change it up a bit for variety.  You can add garlic, ginger, just about anything you’d like. I assume most folks on special multiple allergy diets have cast an uneasy eye on the new Expandex modified tapioca starch. I recently purchased a bag to experiment with and did a little investigating on the product in order to hopefully shed some light on things.

I contacted Corn Products U.S. technical support last week and a company representative responded (albeit after almost a week of waiting). Perhaps that is a good sign. The representative may have been digging deep to make sure the information presented is factual and accurate….

My contact confirmed that Expandex Modified Tapioca Starch is made in a dedicated facility where no gluten or corn are processed.

rice puddingMy mother-in-law made my kids rice pudding while we were visiting them. She has a knack for making the perfect rice pudding. She diligently stands over the pot and makes sure it doesn’t stick or burn. She cooks it a long time too. At her house it was made with goat milk, but I just can’t savor the taste of goat milk pudding, so I often ate only a few bites. But the kids loved it.

Mychalina, my mother, would always make the best kolacky’s. She would be in the kitchen for hours on end, making dozens and dozens for holidays, church socials, for birthdays, graduations, you name it. Well into her 80’s she would make them for us, even for the neighbors who mowed here lawn and shoveled her snow. That’s the kind of wonderful and generous person she was. Before she recently passed away my family and I made it a point to get all her favorite recipes. It is a good thing because she never wrote anything down.

Kolacky’s were my favorite recipe of hers. Her prune and apricot kolackys were the best. In one sitting I could eat a dozen. Now since my recent diagnose of Celiac, I thought I would never be able to eat another kolacky again. But thanks to my husband’s niece and the use of her kitchen, we successfully made a GF version of my mother’s kolackys. Trust me it wasn’t easy. After many failed attempts and many long hours in the kitchen, we finally had an edible kolacky that was pretty close to my mother’s original recipe. Gluten-free Blueberry Muffins

Blueberry muffins have been a fetish of mine since I was a child. They are a handy on-the-go snack that freeze very nicely. I make bulk batches when I get the urge and then freeze them for future use.

After several unsuccessful attempts I have finally figured out how to make them light and moist. Rather than use sugar and a liquid, I substitute with maple syrup (honey tends to make them brown too fast) and I use 1/3 part almond flour in my muffin mix.
