I made an easy sausage stew recipe tonight that I have to share with you. It’s simple, uses a lot of semi homemade ingredients, and is jam-packed with healthy vegetables like green beans and spinach. It’s another hump day recipe for my low carb section. So that makes it a low starch and low sugar recipe. The best part? The kids loved it. Would you like to know my secrets? You’ll love this recipe. It is so simple to make. It’s no secret that in our house we are careful to avoid artificial colors, flavors, and preservatives.
We also try to eat whole, organic foods as often as possible. On top of this, our oldest son was diagnosed with celiac in 2007 and tested positive for a corn intolerance.

I went into total food shock right after his diagnosis, but I’ve been cooking this way for 5 years now. I’m used to it.
I’m really starting to love it. At our house we do a low carb gluten free diet for the most part. But our reasons for doing low carb have nothing to do with weight loss. And I have to come clean and warn my low carb readers– We aren’t purists, either. I will snag that bag of organic sugar from time to time and whip up a cake for the holidays.
But our day to day diet is generally foods like this easy sausage stew. We have to maintain a low sugar low starch lifestyle to help with digestive wellness.

Ingredients for Easy Sausage Stew Recipe
1 32 fluid ounces box of chicken broth (or 4 cups). I used Trader Joe’s organic gluten free brand low sodium, but any brand will do. If you are gluten and corn free, check my safe foods page for brands to use)
1 package of Trader Joe’s Smoked Fresh Turkey Kielbasa (or your favorite gluten free brand)
1 container of Mirepoix (which is about a cup each of chopped carrots, celery, and onions)
1 cup frozen spinach
1 cup frozen green beans (already cut in small pieces)
1-2 teaspoons of sea salt (or to taste)
1 teaspoon ground black pepper
2 teaspoons of garlic powder
1 heaping tablespoon of dried parsely
1 heaping tablespoon of dried basil
1 small 6 ounce can of tomato paste
2 tablespoons of San-J or Kikkoman gluten free Tamari (it’s a gluten free soy sauce) This is optional for flavor. Omit if you need to be soy free.
2 cups of either diced turnips, diced parsnips, or diced red potatoes (no potatoes if you are doing low carb, of course).
Directions for Easy Sausage Stew Recipe
I added the box of broth to a dutch oven pot and put it on gas mark 4 to get it to a slow boil. Add the package of mirepoix (which is just a package of already diced carrots, celery and onions), and then all the other ingredients except the kielbasa. While the vegetables are cooking away in the pot, carefully peel off the hard casing on your kielbasa. Once you’ve removed the casing, dice the sausage into cubes and put it into the pot. Cook the soup on medium low heat at a constant low boil for about an hour. When the vegetables are soft it is ready to serve. This easy sausage stew recipe makes 4-6 servings.
