Quick Cooking Sweet Potatoes

If you are looking for something different, here’s a quick and easy way to cook sweet potatoes that’s not the same old mashed, or Thanksgiving sweet.
Ingredients:
2 large sweet potatoes, washed and peeled, salt (and black pepper if desired)
olive or canola oil
Directions:
Using a mandolin slicer, slice the sweet potatoes into thin round slices. Place in a large bowl and toss with oil and salt.
Layer in a 9 x 13 baking pan lined with foil.
Bake about 30 minutes at 350 degrees.
