Low carb apple muffins are a great snack to pack in a brown bag lunch. So how did my gluten free low carb Apple Muffins recipe come about? This grain-free recipe was an act of accidental genius, and I only have this crazy house full of kids to thank. Want the short version of what happened? I was making low carb carrot muffins, actually. My plan was to alter my Carrot Cake recipe by taking the sugar out completely and using only honey as a sweetener. I also planned to substitute my gluten free flour mix with gluten free almond flour to make it low carb. I had all the ingredients out and had even peeled and grated the carrots. But of course, baking on a Sunday afternoon is risky business in my house.

Now take three imaginative boys running around the house, rainy weather, the addition of a few neighbor kids, and then throw in a fussy baby and what do you get? Carrot Muffins without the carrots. Or if you’re lucky, low carb apple muffins.

I smacked myself in the forehead and groaned after I realized 5 minutes into baking what I had done. The kids didn’t skip a beat. They rallied around me. We watched these low carb apple muffins rise after I was certain they probably wouldn’t. They rose, and when they came out of the tin they were moist and spongy and tangy and sweet. The kids loved them. So instead of throwing the entire batch out, we decided to post our surprise act of accidental genius: low carb Apple Muffins. Anyone on a low glycemic diet or trying to watch their sugar and carbs will love this recipe.

We managed to slash 8 carbs per serving just by using gluten free almond flour instead of what most people are used to using: wheat flour. Wheat flour instead of almond flour would give you a total of 20 carbs per serving. But even worse would be the supposedly ‘health conscious’ gluten free version of this recipe (made with a typical gluten-free flour blend of rice flour, potato flour, and corn starch). That version would give you a whopping 24 carbs per serving.

NOTE: This low carb recipe is high in Vitamin E, Manganese, Magnesium, Phosphorus, Riboflavin, Calcium, Copper, and Iron.


Nutrition Information
4 eggs

2 c Gluten free almond flour

2 tsp baking soda

1/2 tsp sea salt

1/2 cup applesauce

3/4 cup olive oil

1/2 cup honey (make sure it is from a reputable honey brand)

1 tsp cinnamon

1/4 cup ground flaxseeds

1/4 cup raisins (optional)


Pre-heat your oven to 350˚ Fahrenheit. Get out muffin tins and grease the bottom and sides with either palm oil or coconut oil (or any other solid shortening). Add all your wet ingredients into a mixing bowl (olive oil, honey, eggs, and apple sauce). Blend on high for about a minute, scraping the sides of the bowl to make sure it is well mixed. Add the flaxseeds, cinnamon, baking soda, salt, and almond flour. Blend on high for up to 2  minutes. Then add the raisins and stir. Using an ice cream scooper filled to the top, drop a spoonful into each muffin cup hole in your tin.

NOTE: The ice cream scooper is a nice tool for making these Almond Apple Muffins because it measures exactly 3/4 of the way filled in each cup. Not only do you get muffins that won’t over rise and spill out around the edges of your tin, but they will all be the same size too.

Bake your low carb Almond Apple Muffins at 350˚ Fahrenheit for 25 minutes or until golden brown. If necessary, score the outer edges of the muffins with a butter knife before attempting to pop them out and serve them. If you’ve got a non-stick pan they should fall right out, if not, use papers instead.

  1. That is a funny story. So these muffins were spongy and sweet? It is hard to believe there is no flour in them except ground up almonds. Just by the picture it looks like there has to be some kind of grain flour in that recipe. Thanks for sharing. The picture of them looks really good.

  2. Hmm. I never thought of using almond meal ‘neat’ as it were. I’ve just been using it as an additive. Presumably you could use any of the ‘nut meals’ in the same way. Thanks for the tip.
