A Salad Nicoise Recipe for a Simple Appetizer

Salad Nicoise

No matter how you eat, whether it’s a restricted diet or not, it’s easy to get in a rut. We broke out of our rut with a “Spring is Coming” Salad Nicoise. Salad Nicoise is a French salad that traditionally includes hard boiled eggs, tuna and green beans.

While I often include tuna — a high quality Italian one packed in oil — this time I didn’t happen to have any, so I left it out.

As shown, this recipe includes:

mushrooms, sauted
grated carrots (mostly for color)
a greens mix
green beans, steamed
hard boiled eggs, quartered
jarred marinated artichoke hearts, quartered (if you are corn-free check the labels and avoid white vinegar).

We served it with a balsamic vinaigrette. (Be careful with the store bought brands if you are corn-free). You should feel free to use whatever ingredients you have; the essentials are at least one protein source (eggs, tuna, or both) and a variety of vegetables, which can include cooked or raw.

I figure the French are into making good use of left overs and eating what’s in season, so whatever I have on hand must be fine.

It’s also a great way to avoid the gluten issue altogether!

Tip: To prevent greenish discoloration on your egg yolks, remove them from the boiling water and put them right into a bowl of cold water. Leave them there to cool until you’re ready to peel them.
