If you have a full time job and are attempting your major allergy-friendly cooking on the weekends, then this recipe is just the thing you need for a fast semi-homemade meal in no time at all. From start to finish you can have this one on the table in 30 minutes, thanks to Eden Organics two awesome gluten and corn-free prepared canned items: Caribbean Rice and Beans, and Diced Tomatoes. This dish is also naturally dairy, egg, and soy free. Traditionally a spicy dish, my three boys ate this tasty lunch in stride with a touch of added honey.

Gluten-free Roast Chicken with Potato Stuffing

After practicing a gluten and corn-free diet for nearly a year I often run into people that say it is just too expensive or too inconvenient to be completely gluten-free. I decided to commit some time to developing recipes that don’t require any special alternative ingredients and can be easily made by anyone on a budget.

This dish is a great getting started recipe. All the ingredients can be found at your local grocer. We reserve this one for the weekends, because even though it only takes about 30 minutes to prepare, we buy a 6 lb bird that requires nearly 3 1/2 hours in the oven. (more…)

Crockpot Cream of Chicken with Rice Soup

The secret to making good Chicken soup in the crockpot is in the meat. I love to use the crockpot but making it the traditional way, with the chicken on the bone, always ends up creating a stringy mess. The meat just seems to fall apart into tiny shreds. I’ve finally solved this problem with a low-fat version that tastes great. This dish is gluten and corn free, without casein, and Feingold friendly. It takes about 30 minutes to prepare and takes about 6 hours to cook.

Allergy-friendly Dutch Oven Chicken Cacciatore

This is an easy Dutch oven dish for the busy cook, I promise you. But it does need time to simmer, so it is better suited for a day when you are not pinched for time. Thanks to the folks at Eden Foods, this version of everyone’s family favorite is suitable for corn-allergy sufferers as the signature sauce does not contain citric acid.

Our Cacciatore takes only 10 minutes to prepare and about 2 1/2 hours to simmer on the stove top. It can be placed in a crockpot too if you want more freedom to pop out and go shopping after it is prepared. This Cacciatore is a flavorful meal that is gluten, corn, and dairy-free. (more…)

In the spirit of food reconstitution, here is a good recipe for that homemade roast chicken you served last night. It will only take you about 15 minutes to prepare, so get out your mini food processor and grab those left-overs. This dish is gluten and corn free, suitable for the Feingold dieter, and casein free.
