Cherrybrook Kitchen’s Gluten-free Dreams Chocolate Cupcakes

February 6th, 2009 by Caryn Talty | 1,024 views | Comments3 Comments »

cherrybrookcupcakeWe recently tried out Cherrybrook Kitchen’s Gluten-free Dreams Chocolate Cake Mix. We used a single box mix and it produced 12 standard-sized (2 3/4 inch diameter) cupcakes. The directions on the box were simple and the recipe requires no eggs. We opted to avoid the vanilla extract and go with orange oil instead because our corn-intolerant son reacts to commercially made vanilla extracts. Otherwise we followed the directions on the box. The cupcakes baked for 18 minutes.

We topped our cupcakes with a variation of Better Homes and Gardens’ popular fudge frosting recipe. I halved the original recipe, exchanged the butter for spectrum palm oil, and omitted the vanilla again.  My version required more water and I utilized the microwave to get the right consistency.

Our family really enjoyed the cupcakes. The box mix from Cherrybrook Kitchen is a really delicious dark, bittersweet cake, and the frosting is a thick, fudge-like, very sweet but not sticky topping. I personally found the frosting to be a bit sweet for me but the boys unequivocally objected. They thought it was just perfect. We will definitely make this again. …read the rest of this entry »

Joel Stein of the L.A. Times Insults Parents of Allergic Children

Some reporters just don’t get it. Joel Stein is on that list. On Jan. 9th he posted a commentary at the L.A. Times that would make any parent of a child with allergies skin crawl. Perhaps he was trying to be funny.
It unnerves me that people with media power would abuse it such a reckless way. Folks may read Joel Stein’s piece and think it is perfectly okay to feed your child with allergies the forbidden food because the child’s problem is not his digestive system but a ‘yuppie rich phenomena” that his parents have bought into. …read the rest of this entry »

Non-Dairy Crockpot Rice Pudding

January 14th, 2009 by Caryn Talty | 1,582 views | Comments2 Comments »

rice puddingMy mother-in-law made my kids rice pudding while we were visiting them. She has a knack for making the perfect rice pudding. She diligently stands over the pot and makes sure it doesn’t stick or burn. She cooks it a long time too. At her house it was made with goat milk, but I just can’t savor the taste of goat milk pudding, so I often ate only a few bites. But the kids loved it.

On the day we left she armed me with four bags of pudding rice, the really small, fine beads of rounded pearl rice that make a nice thick pudding. So I got busy experimenting and came up with a recipe that is easy and tasty. …read the rest of this entry »

Flourless Coconutty Fruit Cookies

I waited until the last minute to get together something for my son’s Mother’s Day Tea Party. Wanting to make these cookies as healthy as possible by avoiding all sugars, even maple syrup, I decided to check out Pecanbread.com, a website devoted to helping folks following a Specific Carbohydrate Diet. There I found a handful of recipes. One in particular peaked my interest because I had all the ingredients for it on hand. This was my first attempt to bake cookies without any flour or sugar and I was very surprised at the results. The kids loved them, and for anyone not familiar with the SCD diet, as it is often referred as, this recipe is gluten-free, corn-free, dairy-free, soy-free, and Feingold approved. Oh, and one last thing I forgot to mention–delicious! …read the rest of this entry »
