Quick Stovetop Chicken Curry

chicken curryMost curry recipes include many steps and a laundry list of ingredients. It is hard enough to get food on the table for our busy family these days, with two in sports this spring. After serving this dish quite a few times and always getting a good response I decided to add it to the favorites list.

This is an easy curry recipe that takes about 5 minutes to prepare and about 30 minutes to cook.

Great for a busy evening, it has become a family favorite around here. We like to eat it once or twice a month, sometimes more, and often change it up a bit for variety.  You can add garlic, ginger, just about anything you’d like. The following is the way we like it best. This dish is gluten free, corn free, dairy free, soy free, nut free, and Feingold friendly. …continue reading »

Gluten-free Roast Chicken with Potato Stuffing

Gluten-free Roast Chicken with Potato Stuffing

After practicing a gluten and corn-free diet for nearly a year I often run into people that say it is just too expensive or too inconvenient to be completely gluten-free. I decided to commit some time to developing recipes that don’t require any special alternative ingredients and can be easily made by anyone on a budget.

This dish is a great getting started recipe. All the ingredients can be found at your local grocer. We reserve this one for the weekends, because even though it only takes about 30 minutes to prepare, we buy a 6 lb bird that requires nearly 3 1/2 hours in the oven. …continue reading »

Crockpot Cream of Chicken with Rice Soup

The secret to making good crockpot chicken soup is in the meat

Cream of Chicken Soup

I love to use the crockpot to make an easy chicken soup recipe. But making it the traditional way, with the chicken on the bone, always ends up creating a stringy mess. The meat just seems to fall apart into tiny shreds.

I’m a real fan of the ‘set it and forget it’ mentality, so I’ve finally solved this problem with a low-fat version that tastes great. I just use lean, boneless, skinless breasts of chicken meat. This particular soup recipe is gluten, dairy, and corn free. It is also Feingold approved too. This chicken soup recipe only takes about 30 minutes to prepare,  and takes about 6 hours to cook. …continue reading »

Allergy-friendly Easy Dutch Oven Chicken Cacciatore Recipe

An easy chicken cacciatore recipe

Make Chicken Cacciatore for a Low Carb Healthy Family Meal

This chicken cacciatore is an easy Dutch oven dish for the busy cook, I promise you. But it does need time to simmer, so it is better suited for a day when you are not pinched for time. Thanks to the folks at Eden Foods, this version of everyone’s family favorite is suitable for corn-allergy sufferers as the signature sauce does not contain citric acid.

Our chicken cacciatore takes only 10 minutes to prepare and about 2 1/2 hours to simmer on the stove top. I usually make it in the early afternoon on school days. It can be placed in a crockpot too if you want more freedom to pop out and go shopping after it is prepared. This chicken cacciatore is a flavorful meal that is gluten, corn, and dairy-free. …continue reading »
