I got the idea for this dessert recipe from a similar one featured on Karina’s Kitchen. It was just before Christmas last year. I was busy searching the web for a good cookie sheet recipe that was much like our family favorite toffee bars. I stumbled across Karina’s Almost Sausalito Cookie Bars. I had some of the ingredients on hand, and then just altered the recipe a small bit to make it like my mother’s toffee bar recipe that is of course, not gluten free. These moist, cake-like Brownies are not overly sweet. I used fructose sugar (which I’m told is always derived from corn these days). But if you are not corn-free, I think it is a good replacement for standard refined sugar. I used Baker’s brand chocolate in my version but there are several casein-free brands out there like Elite (which is a Kosher product that is also soy-free), Enjoy Life (GF, CF, MF, soy and Nut free), and Tropical Source (which is also found at Whole Foods and is vegan too).The entire dish takes under an hour to prepare and probably even less to polish off because they are so delicious. Are you looking for a gluten and corn free chocolate chip cookie recipe? When we first went gluten and corn free we relied a lot on packaged cookie mixes and store bought brands. As time went on and I got a little more gfree savvy in the kitchen I thought I would experiment with a base dough for all my cookie recipes.

My all time favorite cookie recipe has always been the chocolate chip cookie. I can remember my mother making chocolate chip cookies when I was a girl. I would often come in the door from school smelling those cookies fresh from the oven.

The biggest challenge for my gluten and corn free chocolate chip cookie recipe was texture. I wanted a cookie that was chewy and did not fall apart too easily. After dozens of trials and errors I think I’ve finally found my keeper. I baked countless batches of not-quite-so perfect chocolate chip cookies until I developed a recipe that is very close to the original Nestle Tollhouse cookie recipe.
