Non-Dairy Crockpot Rice Pudding

rice puddingMy mother-in-law made my kids rice pudding while we were visiting them. She has a knack for making the perfect rice pudding. She diligently stands over the pot and makes sure it doesn’t stick or burn. She cooks it a long time too. At her house it was made with goat milk, but I just can’t savor the taste of goat milk pudding, so I often ate only a few bites. But the kids loved it.

On the day we left she armed me with four bags of pudding rice, the really small, fine beads of rounded pearl rice that make a nice thick pudding. So I got busy experimenting and came up with a recipe that is easy and tasty. …continue reading »

Elaine’s Coconut Milk Frozen Yogurt

Coconut Milk Frozen Yogurt

My husband says this is better than real ice cream, but we think that’s going a bit too far. It is super rich, creamy and delicious!

While this recipe does contain milk, it’s in the form of yogurt, so it will work for those who cannot have liquid milk, but who can have yogurt and cheese.

To make this frozen yogurt, you’ll need an ice cream machine. I have the Cuisinart electric ice cream and frozen yogurt maker. …continue reading »

Pure Decadence Coconut Milk Ice Cream

Pure Decadence Coconut Milk Ice Cream

When I heard there was a new choice in frozen treats for those of us who don’t eat/drink dairy products, boy was I excited. After all, this is National Ice Cream Month. I already make my own coconut milk frozen yogurt, but to be able to purchase already made coconut milk ice cream is a terrific option, and it’s even made with an alternative sugar — agave nectar. Pure Decadence is not rich — a characteristic you’ll either find “light and refreshing” or you may wish it were richer and creamier.

Our family celebrated National Ice Cream day by running a mini taste test on the new line of Pure Decadence non-dairy coconut ice creams. We looked at four flavors over two days: Coconut, Cookie Dough, Vanilla, and Chocolate. If you haven’t yet tried this brand, you may want to, it is a good alternative to soy and rice creams. …continue reading »

The Joy of Eating a Gluten-free Angel Food Cake…

Angel Food Cake

My mom’s most requested cake is just a simple angel food cake with fresh fruit and whipped cream. She wanted me to bake her something I could eat too, so we decided to take a chance on baking an angel food cake with an alternative flour.

We thought it would work, since angel food cake only uses 1 cup of flour, and all the leavening comes from the dozen eggs in the recipe. But just in case, we bought a back-up cake at the grocery store.

You know what that means — it worked! Any time you’re ready with the back-up, you don’t need it, right? …continue reading »

Dairy-free? Native Forest and Aroy-D are the Best Coconut Milks for Desserts

Coconut Milk

If you’re avoiding dairy it’s not too hard to find a substitute since there are so many fine choices out there — various nut milks, soy milks, as well as rice milks. Most people gravitate toward nut milks and soy milks when they need to substitute for whole milk or cream in a recipe. But what do you do if you’re avoiding soy? The thickest of the milk substitutes, soy is a handy go to for the dairy-free baker. It’s the staple product in nearly all non-dairy frozen goodies. Let’s face it, no soy means no Tofutti Cuties! …continue reading »
