The pecan dreams cookie has always been a childhood favorite for me. I can remember sneaking into the freezer as a child to snatch these shortbread-like cookies in the days before our holiday gatherings. I would go into hiding to eat those pecan dreams so that my mom wouldn’t catch me in the act. Mom often had half her batch of pecan dreams left when it came time to divvy them up as gifts to friends and family or serve them for dessert after the holiday dinner.

She never said a word to me or my brother about the missing pecan dreams cookies.

After my son’s diagnosis in 2007 with celiac disease and his need to go on a strict gluten and corn free diet, we had to stop making this family favorite. Over the years I have attempted to recreate it but have never gotten the recipe quite right, until now.

We tried a brand new allergy safe cookie recipe after I picked up the boys from school today. We were all chilled to the bone as we raced through the school parking lot on the way to the car.

The oldest one said to me, “You know, this is the perfect day for cookies and hot chocolate.”

Well, I couldn’t agree more.

After we landed in the door we got started on a quick TGIF cookie that we could all enjoy and even share with our aunt who is gluten free, dairy free, soy free, and corn free.

Mychalina, my mother, emigrated from the Ukraine as a young married woman with two children.  I was the second youngest of five sisters and grew up watching my mother make her kolacky recipe on that old cutting board she had. She would always make the best kolackys. She would be in the kitchen for hours on end, making dozens and dozens of kolacky cookies for holidays, church socials, for birthdays, graduations, you name it. Well into her 80′s she would make this traditional kolacky cookie recipe for us, even for the neighbors who mowed here lawn and shoveled her snow. That’s the kind of wonderful and generous person she was. Before she recently passed away my family and I made it a point to get all her favorite recipes. It is a good thing because she never wrote anything down.

Her kolacky cookie recipe was always my favorite recipe of hers. Her prune and apricot kolacky cookies were the best. In one sitting I could eat a dozen. Now since my recent diagnose of celiac, I thought I would never be able to eat another kolacky cookie again. But thanks to my husband’s niece and the use of her kitchen, we successfully made a GF version of my mother’s kolackys. Trust me it wasn’t easy. After many failed attempts and many long hours in the kitchen, we finally had an edible kolacky that was pretty close to my mother’s original recipe. According to my family, and my niece’s 5 year-old diagnosed son, they were delicious. So if you are gluten intolerant and you think you can’t ever eat a kolacky again, here’s a recipe for you to try. I waited until the last minute to get together something for my son’s Mother’s Day Tea Party. Wanting to make these cookies as healthy as possible by avoiding all sugars, even maple syrup, I decided to check out Pecanbread.com, a website devoted to helping folks following a Specific Carbohydrate Diet. There I found a handful of recipes. One in particular peaked my interest because I had all the ingredients for it on hand. This was my first attempt to bake cookies without any flour or sugar and I was very surprised at the results. Are you looking for a gluten and corn free chocolate chip cookie recipe? When we first went gluten and corn free we relied a lot on packaged cookie mixes and store bought brands. As time went on and I got a little more gfree savvy in the kitchen I thought I would experiment with a base dough for all my cookie recipes.

My all time favorite cookie recipe has always been the chocolate chip cookie. I can remember my mother making chocolate chip cookies when I was a girl. I would often come in the door from school smelling those cookies fresh from the oven.

The biggest challenge for my gluten and corn free chocolate chip cookie recipe was texture. I wanted a cookie that was chewy and did not fall apart too easily. After dozens of trials and errors I think I’ve finally found my keeper. I baked countless batches of not-quite-so perfect chocolate chip cookies until I developed a recipe that is very close to the original Nestle Tollhouse cookie recipe. I practiced a lot this past holiday with some of our family’s favorite home-baked cookie recipes, a tradition among the women in our extended family that dates back to a time long before I was born. This was our first gluten free Christmas, and it began with several mishaps and a lot of perseverance. Here is my all time best success this year.
