If you are frantically getting ready for the holidays and in need of a good alternative to the egg nog in the stores, here’s a terrific dairy free recipe that is quick and easy.

We hadn’t had egg nog for years until last Christmas when we decided to have a battle of the egg nog contest at our house: Joy of Cooking vs. the Internet.  We mixed up a batch of the Joy of Cooking Cooked recipe.  My mom chose an internet recipe that was less rich and less sweet.  The Joy of Cooking recipe was sweeter and richer – much richer.

Our dairy free modification to the Joy recipe was to replace all of the milk and cream with coconut milk.  Of the total quantity, we used half light coconut milk and half full fat. …read the rest of this entry »

Someone who gave me mayo advice a while back said that there was nothing that compared to real, fresh, honest mayo.

Boy, was she right.

I have attempted to make mayo before, but it wasn’t until recently that I finally cracked the code. I have tried several different recipes both online and even the one found in my beat up Better Homes and Gardens Cookbook that has navigated my kitchen with me for years.

I have always failed. It didn’t matter how many times I tried, my mayonnaise never  wanted to thickenen properly. If it did it would deflate as soon as I added the oil.

Our neighboring Canadians will recognize this crust as the famous Kingsmill Foods crust sold online, in stores, and at select pizzerias across their country for years. The spokesperson I chatted with informed me that Kingsmill Foods was the pioneer supplier of gluten free foods in Canada. Two years ago Kingsmill Foods sold their gluten free line to Canbrands Specialty Foods and the brand name is now in the process of changing to Pane Riso Foods. I decided to commit some time to developing recipes that don’t require any special alternative ingredients and can be easily made by anyone on a budget.

Sweet and Sour Stuffed Peppers

I’ve long wanted to create an allergy-friendly dish that is loaded with veggies and tasty too. With a little experimenting, I created a gluten and corn-free, dairy-free, and Feingold friendly meal that your kids may balk at trying but will definitely want to finish. My kids were surprised at how good these peppers tasted, and they gave it a definite thumbs up for the blog.

From start to finish it takes about 1 hour to prepare, assemble, and simmer. Makes six heaping medium-sized stuffed peppers or seven lightly stuffed ones. Will keep in the refrigerator for a couple of days and can be frozen as well. …read the rest of this entry »
