This kid-friendly salad greens recipe, aptly named by son #2 as “Little Chef Salad” is good enough for a toddler to eat. Inspired by Remy, our household is slowly changing our ways. I often joke that a year ago we could have been considered the “Mc Talty” family for all the times we would frequent McDonalds. My then two year old was so familiar with the place that he felt compelled to point it out whenever we passed one in our travels. We’ve made a complete turn around since then, thanks in large part to our oldest son’s diagnosis of a chronic tic disorder and allergies to gluten and corn. We since eliminated these three foods from our kitchen, and it has made all the difference for him in his recovery.

This salad greens recipe is unique. What makes it special? It is not so much about the ingredients as it is about the preparation. Pancakes are much more festive when they have a cool shape. The best time to make fun shaped pancakes is during a special holiday. The first time we made cookie cutter pancakes was for an annual pancake breakfast at our church on St. Patrick’s Day. Everyone at our church congregates in a large meeting hall and socializes while several volunteers stand elbow to elbow flipping endless flapjacks for an hour and a half. Volunteer bakers supply dozens of loaves of Irish soda bread and there are endless pots of coffee available to all.

Asparagus Spears have been a popular vegetable as far back as ancient Egypt. Sometimes it feels like I have been trying to get my boys to eat asparagus spears since about that time. They just wouldn’t ever touch it. Asparagus is also a great source of vitamins A, C, and folate, so I can’t accept vegetable eating defeat.  I am forever trying to serve up these gems, often leading to a battle of wills, then an ingenious act of deception on my part. But this time my children ate them in broad daylight without a fuss. I created this new asparagus side dish on a complete whim and it was a recipe my kids loved. My eldest said it tasted like ‘bees honey’ and after much cajoling and a promise that he could ‘spit it out’ at the table if he needed to, my middle child (he’s the one that’s three), said (and I quote): “Mommy! This is not yucky!”
