Gluten-free Roast Chicken with Potato Stuffing

Gluten-free Roast Chicken with Potato Stuffing

After practicing a gluten and corn-free diet for nearly a year I often run into people that say it is just too expensive or too inconvenient to be completely gluten-free. I decided to commit some time to developing recipes that don’t require any special alternative ingredients and can be easily made by anyone on a budget.

This dish is a great getting started recipe. All the ingredients can be found at your local grocer. We reserve this one for the weekends, because even though it only takes about 30 minutes to prepare, we buy a 6 lb bird that requires nearly 3 1/2 hours in the oven. …continue reading »

Allergy-friendly Easy Dutch Oven Chicken Cacciatore Recipe

An easy chicken cacciatore recipe

Make Chicken Cacciatore for a Low Carb Healthy Family Meal

This chicken cacciatore is an easy Dutch oven dish for the busy cook, I promise you. But it does need time to simmer, so it is better suited for a day when you are not pinched for time. Thanks to the folks at Eden Foods, this version of everyone’s family favorite is suitable for corn-allergy sufferers as the signature sauce does not contain citric acid.

Our chicken cacciatore takes only 10 minutes to prepare and about 2 1/2 hours to simmer on the stove top. I usually make it in the early afternoon on school days. It can be placed in a crockpot too if you want more freedom to pop out and go shopping after it is prepared. This chicken cacciatore is a flavorful meal that is gluten, corn, and dairy-free. …continue reading »

Allergy-friendly Sweet and Spicy Carribean-style Pork Chops

Carribean-style Pork Chops

This recipe is the brain-child of an impulse buy at the grocery store, made just to keep a sixteen-month old in need of a nap from having a meltdown in the cart. I dutifully paid the cashier for the mango I could barely pry out of my baby’s grip, quickly gave it back and let him hold it all the way home in the car. At home I washed the now slimy skin and peeled and sliced it for my three boys, who all concluded it was “yucky.” Not willing to go down without a fight, here is what I decided to do with that pesky mango. …continue reading »

Make Kugelis, a European-style Baked Potato Casserole

This recipe is gluten, soy, corn, and dairy free, too.

gfcf Kugelis recipeWe altered my family’s potato casserole dish, also called kugelis (koo-gull-iss), by making it safe for the celiac community. Kugelis is the national dish of Lithuania, and it is usually made with wheat flour. When I make it I just simply switch to an all-purpose gluten free flour mix and that makes it safe for all the gluten intolerant folks in our family. It is usually served as a side dish, but Kugelis can also be served as a main course if you add a little cooked bacon and sautéed onions to it, as pictured. This potato casserole closely resembles a souffle and is sometimes described as a potato pudding. It is well-formed and can be cut into sizable serving squares. Once you give it a few minutes to set up it can easily be plated.  It takes 15 minutes to prepare (the bacon and onion variety will take longer) and cooks for 1hr 15 minutes. Also known as Kugelis, this souffle will serve 8-10 people and can be refrigerated and reheated. …continue reading »
