Potato Leek soup seemed like a good idea when I saw leeks on sale this morning at the store. I’ve never attempted it before but we’re in the middle of a cold spell with more snow planned. I knew I wanted a nice hot soup after the boots, hats and mittens come off. I loosely modeled this leek soup after Emeril’s version. It is spicy, but I completely left out the dairy and instead added more of everything else. In the end I had a 2 quart slow cooker brimming with a delicious soup that took only 1/2 hour to throw together and about 3 hours to simmer. Irish stew is a favorite in our house. I’ve usually made it on the stove, but we’ve begun using a slow cooker crockpot to help get dinner on the table on days when we’re running around after school doing activities until dinner time. Here is our favorite easy crockpot slow cooker Irish stew recipe that our family loves to eat. I like simplicity when I cook, and since we have a larger family with four kids, affordable recipes are very important. The key to a good old fashioned Irish stew is in the simplicity of the spices.

Stews and soups are particularly challenging for the gluten and corn free home cook who is used to bouillon cubes or gravy mixes. If you like simple but tasty, this slow cooker Irish stew recipe is the perfect meal for a cold rainy day.

Make Kugelis, a European-style Baked Potato Casserole

This recipe is gluten, soy, corn, and dairy free, too.

gfcf Kugelis recipeWe altered my family’s potato casserole dish, also called kugelis (koo-gull-iss), by making it safe for the celiac community. Kugelis is the national dish of Lithuania, and it is usually made with wheat flour. When I make it I just simply switch to an all-purpose gluten free flour mix and that makes it safe for all the gluten intolerant folks in our family. It is usually served as a side dish, but Kugelis can also be served as a main course if you add a little cooked bacon and sautéed onions to it, as pictured. This potato casserole closely resembles a souffle and is sometimes described as a potato pudding. It is well-formed and can be cut into sizable serving squares. Once you give it a few minutes to set up it can easily be plated.  It takes 15 minutes to prepare (the bacon and onion variety will take longer) and cooks for 1hr 15 minutes.
