If you are frantically getting ready for the holidays and in need of a good alternative to the egg nog in the stores, here’s a terrific dairy free recipe that is quick and easy.
We hadn’t had egg nog for years until last Christmas when we decided to have a battle of the egg nog contest at our house: Joy of Cooking vs. the Internet. We mixed up a batch of the Joy of Cooking Cooked recipe. My mom chose an internet recipe that was less rich and less sweet. The Joy of Cooking recipe was sweeter and richer – much richer.
Our dairy free modification to the Joy recipe was to replace all of the milk and cream with coconut milk. Of the total quantity, we used half light coconut milk and half full fat. …read the rest of this entry »

Someone who gave me mayo advice a while back said that there was nothing that compared to real, fresh, honest mayo.
Boy, was she right.
I have attempted to make mayo before, but it wasn’t until recently that I finally cracked the code. I have tried several different recipes both online and even the one found in my beat up Better Homes and Gardens Cookbook that has navigated my kitchen with me for years.
I have always failed. It didn’t matter how many times I tried, my mayonnaise never wanted to thickenen properly. If it did it would deflate as soon as I added the oil.
Eventually I discovered my problem. I wasn’t using the right tools. …read the rest of this entry »

I was rummaging through the pantry trying to figure out what to make for dinner last night. I had a little over an hour and few ingredients– eggplant, a box of gluten-free lasagna noodles, a jar of sauce, a container of cottage cheese.
I contemplated making lasagna but without my usual ingredient listing I decided to pass, instead opting to try Eggplant Parmesan for a change.
This was my first attempt at making Eggplant Parmesan, period, never mind trying to alter it to make it gluten free. The dish turned out to be a favorite with everyone, and the kids especially loved the battered, fried eggplant. I decided to officially add it to the list. It takes a bit of time to make but is well worth the effort. …read the rest of this entry »

Most curry recipes include many steps and a laundry list of ingredients. It is hard enough to get food on the table for our busy family these days, with two in sports this spring. After serving this dish quite a few times and always getting a good response I decided to add it to the favorites list.
This is an easy curry recipe that takes about 5 minutes to prepare and about 30 minutes to cook.
Great for a busy evening, it has become a family favorite around here. We like to eat it once or twice a month, sometimes more, and often change it up a bit for variety. You can add garlic, ginger, just about anything you’d like. The following is the way we like it best. This dish is gluten free, corn free, dairy free, soy free, nut free, and Feingold friendly. …read the rest of this entry »

My mother-in-law made my kids rice pudding while we were visiting them. She has a knack for making the perfect rice pudding. She diligently stands over the pot and makes sure it doesn’t stick or burn. She cooks it a long time too. At her house it was made with goat milk, but I just can’t savor the taste of goat milk pudding, so I often ate only a few bites. But the kids loved it.
On the day we left she armed me with four bags of pudding rice, the really small, fine beads of rounded pearl rice that make a nice thick pudding. So I got busy experimenting and came up with a recipe that is easy and tasty. …read the rest of this entry »

I got the idea for this recipe from Karina’s Kitchen, at the glutenfreegoddess blogspot. It was just before Christmas and I was busy searching the web for a good cookie bar recipe that was much like our family favorite toffee bars. I stumbled across her Almost Sausalito Cookie Bar recipe. I had some of the ingredients on hand, and then just altered the recipe a small bit to make it like my mother’s toffee bar recipe that is of course, not gluten free. In the end our new gluten free family favorite was born. Around the house I call them toffee bars, but there isn’t any toffee in them so that name doesn’t seem to fit. …read the rest of this entry »

I’ve made this a few times now. It is pretty simple and sets up pretty fast so there is no need to make it the night before. I was originally trying to make a chocolate frosting using real melted chocolate chips and what resulted was a really tasty chocolate pudding. The kids loved it. Last week I used it as a filling in a double layered gluten-free chocolate cake I made using Cherrybrook Kitchen’s box mix. …read the rest of this entry »
