Make an all Natural Kid-Friendly Sweet Asparagus Spears Recipe

Cook up Healthy Asparagus That Won’t be Rejected by Picky Kids

Sweet Asparagus Spears

Sweet Asparagus Spears

Need to make a fast asparagus spears side dish that your kids will love? Try heating up this sweet asparagus spears recipe. It is important to get kids eating their vegetables. A power-packed one like asparagus spears is a fantastic choice, but kids usually turn their noses up at them. For a change of pace, add a little fresh plum sauce. Asparagus is a special vegetable because it is extremely high in glutathione, the most powerful antioxidant. This makes asparagus spears an awesome choice for kids with an ADHD diagnosis, people with Parkinson’s disease, cancer patients of all ages, and folks suffering from dozens of other diseases. Glutathione is an antioxidant that helps repair cell damage,  keeps inflammation down and helps the body get rid of toxins.

Asparagus Spears have been a popular vegetable as far back as ancient Egypt. Sometimes it feels like I have been trying to get my boys to eat asparagus spears since about that time. They just wouldn’t ever touch it. Asparagus is also a great source of vitamins A, C, and folate, so I can’t accept vegetable eating defeat.  I am forever trying to serve up these gems, often leading to a battle of wills, then an ingenious act of deception on my part. But this time my children ate them in broad daylight without a fuss. I created this new asparagus side dish on a complete whim and it was a recipe my kids loved. My eldest said it tasted like ‘bees honey’ and after much cajoling and a promise that he could ‘spit it out’ at the table if he needed to, my middle child (he’s the one that’s three), said (and I quote): “Mommy! This is not yucky!”

Carribean-Style Black Beans and Rice Recipe

Black Beans and Rice

Black Beans & Rice with Pork Chops

I ordered a dish very similar to this at a Cuban restaurant a few years back and I really loved the spicy yet sweet flavors. I decided to recreate the recipe again at home, but this time making sure it was allergy-friendly so that everyone with food intolerances in our family could enjoy it.  My Carribean-style black beans and rice recipe goes great with any Latin-American main course, especially my Sweet and Spicy Carribean-style Pork Chops, (which is what we ate for dinner). It is fast, easy, and tasty. Even our three year old liked it. This side dish is gluten-free, corn-free, casein-free, and perfect for folks on Feingold stage 2 who need to avoid artificial flavors, colors, preservatives, and watch the level of salicylates in their food. …continue reading »

Make Kugelis, a European-style Baked Potato Casserole

This recipe is gluten, soy, corn, and dairy free, too.

gfcf Kugelis recipeWe altered my family’s potato casserole dish, also called kugelis (koo-gull-iss), by making it safe for the celiac community. Kugelis is the national dish of Lithuania, and it is usually made with wheat flour. When I make it I just simply switch to an all-purpose gluten free flour mix and that makes it safe for all the gluten intolerant folks in our family. It is usually served as a side dish, but Kugelis can also be served as a main course if you add a little cooked bacon and sautéed onions to it, as pictured. This potato casserole closely resembles a souffle and is sometimes described as a potato pudding. It is well-formed and can be cut into sizable serving squares. Once you give it a few minutes to set up it can easily be plated.  It takes 15 minutes to prepare (the bacon and onion variety will take longer) and cooks for 1hr 15 minutes. Also known as Kugelis, this souffle will serve 8-10 people and can be refrigerated and reheated. …continue reading »
